Kahlua or any coffee liqueur is often missed by boozy coffee or cocktail-loving Keto Diet practitioners. As with many things keto, making your own is pretty much the only option. Give the recipe a go and you’ll be able to go back to all your favourite drinks requiring Kahlua.
Keto Coffee Liqueur Recipe
Ingredients:
- 1 cup water
- ¾ cup erithrytol, powdered in a spice/coffee grinder
- ¼ teaspoon liquid stevia, chocolate-flavoured
- ⅓ cup instant coffee
- 1 cup vodka
- 2 tablespoons pure vanilla extract
- 1 teaspoon dark cocoa powder
Directions:
Bring the water to a boil in a medium saucepan over high heat. Mix in the erythritol and instant coffee. Reduce the heat to low and whisk until the erythritol and coffee granules are fully dissolved. Remove from heat and allow to cool around 1 hour.
Stir in vodka, cocoa powder, vanilla extract into the cooled coffee mixture.
Transfer the liqueur to a sterilized jar. Seal and store away from light, for 4 to 6 weeks before drinking. Will keep stored in the pantry for up to 6 months. Shake well before using.
