If you’re a keto hiker or backpacking you have no doubt, at some point, lamented the lack of keto trail mix options. Most contain high-carb dried fruits like raisins, high-sugar chocolate, and a large amount of higher carb nuts (like peanuts). They also often roast the nuts in unhealthy oils like soy oil, canola oil, etc. Fortunately, it’s really easy to make you’re own trail mix so you don’t have to worry about all that.

This is my go-to keto hiker trail mix blend. It uses the lowest carb nuts with the highest calorie count, and has no added sugars or sweeteners, but still has a pop of sweetness from goji berries, a lower-carb, nutritious "super food", cacao nibs for anti-oxidants and chocolatey taste, as well as coconut chips. Another great thing about goji berries is that their carbs are complex carbs, so they aren’t likely to spike your blood sugar in addition to also being higher in protein than other berries. They also are a great source of anti-oxidants. One ½ serving is a whole 504 calories giving you great bang for buck in terms of weight-to-food energy, making it a great choice for your next backpacking trip.

Directions:

  1. Put all the ingredients in a bag and you’re done! If you prefer, you can also dry roast the nuts with a bit of salt for flavour and added crunch, but you don’t need to. This recipe makes enough to fill a one-pint bag (around 2 cups).
