I had discovered the widely loved peanut butter bacon burger made by Portland's "Killer Burger" on my random video watchings on YouTube. Since I am unable to go across the border due to the pandemic at this time, I decided to make a keto-friendly copycat version of this beautifully crafted burger at home.

Keto-Friendly "Killer" Portland Peanut Butter Bacon Burger Recipe

Ingredients:

  1. Heat a cast-iron skillet to medium-low. Sprinkle bacon with Swerve Brown. Cook bacon around 7-8 minutes, flip and cook until crispy. Remove bacon and set heat to medium.

  2. While the bacon is cooking, stir together the peanut butter, keto maple syrup and chipotle adobo sauce in a small bowl. Set aside until ready to use.

  3. Form ground beef into 2 patties. Try to do this with as little handling as possible to keep the meat from being overworked. Add a dimple to the centres then season liberally with salt and pepper right before adding them to the skillet.

  4. Cook around 4-5 minutes, flip and cook for 4-5 minutes more, or until an internal temperature of 155C is reached. Flip then spread the peanut butter sauce on the burgers and continue to cook until the peanut butter is a little melty. Remove from grill.

  5. Spread the burger sauce on the lettuce bun bottoms then spread the sautéed onions on top. Spread the mayo on the lettuce bun tops, add the pickle slices, then the bacon slices. Place the burger patties on top of the lettuce bun bottom. Flip the lettuce bun top onto the patty, eat, and enjoy! Try serving it with a side of low-carb fries like my keto baked kohlrabi fries.
