I had leftover gojuchang from a batch of bulgogi and wondered if it could in a Korean-style guacamole. I've made Thai even Greek inspired guacamole in the past, and thought, why not? Turn out that the sweet, spicy, umami flavour of the gojuchang perfectly complements the avocado. In fact, it's practically the same as Mexican guac, except you're adding in some gojuchang. A great appy for any Korean-inspired meal!
Keto Korean Gojuchang Guacamole Recipe
Ingredients:
- 2 small avocados
- 1 small tomato, seeds removed and chopped
- ¼ cup red onion, small minced
- 1-2 tablespoons keto gochugang paste (or to taste)
- ½ teaspoon fine sea salt (or to taste)
- ¼ cup cilantro leaves, chopped fresh
- 1 tablespoon avocado oil
- 1½ tablespoons lime juice, fresh, plus more to taste
Directions:
Scoop out the avocado flesh and add it to a medium mixing bowl. Using the back of a fork, mash the avocado until you get your desired consistency.
Add the tomato, onion, Gochujang, salt and cilantro. Stir in the lime juice and avocado oil. Taste and season with more salt and/or lime juice if needed and serve with cut veggies, pork rinds, keto tortilla chips or keto crackers.
