Thank you, New Orleans for producing this keto-friendly tangy sandwich full of briny olive salad, 3 kinds cured Italian meats, and a solid centre of sliced cheese! There’s nothing like a big, meaty, satisfying sandwich that need only be served on keto bread to make it low-carb. This recipe is my take on this classic. Give it a try!
Keto Muffuletto Sandwich Recipe
Ingredients:
- Garlic-infused extra virgin olive oil
- Genoa Salami, sliced
- Capicola ham, sliced
- Proscuitto or Mortadella, sliced
- 2 kinds of sliced cheese (*Provalone and emmenthal cheese are the most popular choices, but mozzarella is also a popular choice.)
- Muffuleta Olive Salad
Directions:
Brush the insides of the bread with the remaining garlic oil. Toast oiled side until golden brown on a frying pan. (*This is not traditional, but many kinds of keto bread hold up better when toasted.)
Spread the bottom cut and toasted surface generously with half of the olive salad.
Layer all the salami, ham, both cheeses, prosciutto (or mortadella) then another layer of salami. Spread the remaining olive salad and close the sandwich. Wrap the sandwich tightly and allow to rest for 1 hour before serving.
