Want to enjoy pizza flavours and ingredients but don’t have the time to make a keto crust from scratch? Try whipping up a low-carb pizza frittata! Simply mix the sauce in with the eggs, along with 1/2 your pizza toppings, cook until mostly firm, then top with the remainder of the ingredients, with a quick zap under the broiler to crisp up the top. A perfect solution for weeknight pizza cravings!

Keto Pizza Frittata Recipe

Ingredients

  • 6 large eggs, lightly beaten
  • ¼ cup keto marinara sauce
  • ½ teaspoon dried oregano
  • ¼ cup Parmesan cheese, finely grated
  • ⅔ cup pizza mozzarella, grated
  • 1 tablespoon avocado oil
  • Kosher salt, to taste
  • 5 oz pepperoni, chopped
  • 3 tablespoons red onion, diced
  • ¼ cup green peppers, diced
  • ¼ cup mushrooms sliced
  • 2 kalamata olives, pitted and slicedi

  1. In a medium mixing bowl, stir together the eggs, marinara sauce, oregano, parmesan, and then half the pepperoni, and grated mozzarella cheese.

  2. Grease a 10.25" skillet with avocado oil and heat to medium. Add half the onions and green pepper with a sprinkle of kosher salt.

  3. Pour in the egg mixture and lower the heat to medium-low. Cook until the top starts to firm up and the edges are turning opaque, around 8-10 minutes.

  4. Top with the remaining cheese and peppers, sliced olives, mushrooms and pepperoni. Place under broiler for 5-7 minutes to crisp up.

  5. Remove from the oven and set aside to cool down. Top with parmesan, fresh basil and pepper flakes just before serving.
