Yes, I know. Everyone who does the Keto Diet long enough uncovers the magical properties of the Cobb salad with its mix of healthy, low-carb veggies and high fat foods. But you don’t have to stick to the traditional chicken in it. Why not get some fatty omega-3 fish in there instead?

I like to use sardines as my go-to because they’re relatively flavourless like chicken and one can is the perfect amount for a salad, but salmon or mackerel would work too.

Sassy Sardine Cobb Salad Recipe

Ingredients:

  1. Whisk together olive oil, cider vinegar, lemon juice and mustard to make the dressing. Set aside and refrigerate until needed.

  2. Mix spinach and lettuce together in a large bowl. Take each ingredient and create a row on top of the bed of greens.

  3. Give your dressing extra shake or whisk then pour it over your salad then serve. Give it a toss before eating to combine the ingredients.

  1. Sauté the onion, garlic, ginger, yellow pepper, and jalapeño pepper over medium heat until tender, adding paprika for the last 30 seconds. Set sautéed ingredients aside.

  2. Add lime juice, tomatoes, peanut butter, coconut milk and bone broth to a large pot and bring to a gentle simmer. Add sautéed ingredients and simmer for 20 minutes, adding the seafood ingredients for the last 8 minutes.

  3. Remove from heat and stir in zucchini noodles and cilantro. Laden into bowls and top each with 1 tablespoon of chopped peanuts.

It’s fun to experiment with dishes from other cultures and see how to make them work for the keto diet, but it’s nice when you don’t have to push so hard to make it work that it barely resembles the original fish.
