
This sausage and egg breakfast salad recipe is my go-to for to get my "breakfast for dinner" fix. I get all my veggies and the delicious blend of egg, sausage (or bacon) and cheese that I have come to love in omelettes, breakfast sandwiches and all things breakfast really. It's easy to make quickly if you happen to have the ingredients, which I usually do. Of course, this is tasty enough to eat as a morning meal too, but I rarely eat breakfast in the morning these days.
Keto Breakfast Salad Recipe
Dressing Ingredients:
- 1 tablespoon extra virgin olive oil
- ½ tablespoon raw cider vinegar
- ½ teaspoon Dijon mustard
Salad Ingredients:
- 1 egg, poached or fried
- 1 breakfast sausage patty or 2 slices of bacon, cooked and chopped
- 2 cups romaine lettuce or mixed field greens
- 3-4 slices fresh tomato
- ¼ cup mushrooms, sliced
- 3 tablespoons bell pepper, diced
- 1 tablespoon green onion, chopped
- ½ small avocado, sliced
- ¼ cup cheddar cheese, grated (*optional)
- Fresh basil leaves, chopped
- Keto Everything Bagel Seasoning
- 1 small slice keto bread, toasted and buttered
