Don't throw out the green leaves attached to your beets! They're delicious, low carb, and easy to prepare, like in this low-carb sautéed beet greens recipe. I sometimes buy a bunch of organic beets for a carb-up day. When I do, I always cut off the greens and use them the next day as part of my transition back to keto protocol. In this recipe, the garlic, pepper flakes and lemon flavours all complement the light taste of the beets, making it a lovely side dish for any meal.

Keto Sautéed Beet Greens Recipe

  1. Heat a medium saute pan coated with oil over medium heat until the oil shimmers. Add the beet greens and garlic, sprinkle in some salt, then toss until the greens are wilted and tender, 5 to 8 minutes.

  2. Add the red pepper flakes and lemon zest and juice and toss. Season with additional salt and black pepper to taste then serve.
