I've been seeing a lot of "sheet pan" recipes lately, in which you combine all the elements of your meal onto a sheet pan on which everything is roasted up altogether in the oven, for easier cooking and clean-up. This saves on cooking time and clean-up. I decided to try this by combining salmon fillets with sliced bell peppers, onions and mushrooms with a tangy garlic lime marinade I threw together. It was super tasty and I really appreciated being able make this so quickly and being able to walk away afterward with minimal clean-up.

Keto Sheet Pan Garlic Lime Salmon Fillets with Bell Peppers

Ingredients:

  • 2 small bell peppers (preferably different colours), cut into thin strips
  • ¾ cup red onion, thinly sliced
  • 1 cup mushrooms, halved or quartered
  • 4 salmon fillets (around 6 oz each but doesn’t need to be exact)
  • ½ cup lime juice, freshly squeezed
  • 2 tablespoons water
  • 3 tablespoons avocado oil
  • 2 cloves garlic, crushed or finely minced
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon ground cumin
  • 1 teaspoonfine sea salt (or to taste)
  • 1½ tablespoons sugar-free honey substitute
  • ¼ cup fresh cilantro, finely chopped (plus more for garnish)
  • Lime wedges (for serving)

Directions:

  1. Preheat oven to 400F. Line a baking tray with a silicon liner. Whisk together the lime juice, water, avocado oil, garlic, chili flakes, cumin, fine sea salt, honey, and cilantro. Set aside.

  2. Add the peppers, mushrooms and onions to the baking tray and toss together with one third of the marinade. Add in the salmon fillets pushing the veggies aside to make space so that it is directly on the baking tray. Top with another third of the marinade. Bake for 12-15 minutes or until salmon is cooked through and flakes easily with a fork.

  3. Serve on its own or over cauliflower rice, topped with additional marinade and lime wedges on the side. Garnish with more fresh cilantro (if desired).
