Keto Slow Cooker Lemon Spoon Cake


Lemon Glaze Ingredients:

(*I use about 3-4 lemons total for whole recipe.)


  1. In a large bowl, whisk together all dry ingredients. Form a well in the centre then add lemon juice, water, melted butter, eggs, and lemon zest, mix with a spatula until just combined.

  2. Spray slow cooker with non-stick cooking spray.

  3. Pour batter in slow cooker, and smooth the batter down evenly. Cook on high for 2 hours. The cake should be firm in the middle.

  4. While the cake is baking, prepare the glaze. Whisk together the glaze ingredients in a small bowl. Store in the fridge until ready to use. If it hardens too much to pour, add a touch of water and stir to get a pouring consistency to your liking.

  5. When the cake is ready, pour glaze over lemon cake. Sprinkle remaining lemon zest over top. Spoon into bowls, garnish with lemon slices (if desired) and serve with keto vanilla ice cream or keto whipped cream.
