It is sliced mozzarella, Roma tomato, and avocado, along with a single basil leaf, stacked into a pretty, bite-sized appy, then drizzle with extra virgin olive oil, balsamic vinegar and sprinkled with salt and pepper. A delicious, healthy, low-carb, keto-friendly platter for a party or even a quick snack.
Keto Stacked Avocado Caprese Bites Recipe
- 1 large Roma tomato, sliced
- 1 small avocado, sliced
- 1 ball of buffalo mozzarella
- Extra virgin olive oil
- Balsamic vinegar
- Flaky sea salt (like Maldon or Fleur de sel, to taste and freshly ground black pepper), to taste
Arrange each bite in the following order: tomato slice, mozzarella slice, basil leaf, avocado slice. Repeat until your plate is full.
Drizzle olive oil and balsamic vinegar over it all then sprinkle with salt and and pepper.
