I love ginger candies. They're wonderful to chew on for an upset stomach, but I question the need for the amount of sugar they have. But I have also yet to find any company making them sugar-free, using keto-friendly ingredients. I naturally set about making my own. Candied pecans were easy enough, I figured it wouldn't be that much harder. You do have to boil the ginger a while to soften it, but other than that, it's pretty easy to do.

Vegan Keto Sugarless Candied Ginger

Ingredients:

Directions:

  1. Slice into thin slices, approximately ⅛" thick (0.3 cm). Add slices of ginger to a pot with water. Bring to a boil over medium-high heat add salt, reduce heat and boil until ginger is soft (around 30 minutes).

  2. Drain all the water except for 3 tablespoons. Add ginger, reserved water and sweetener to a pan, and turn to medium heat. Simmer until most of the water is absorbed, stirring occasionally. Reduce heat to low and continue to simmer until all water is absorbed, stirring frequently.

  3. Remove from heat and place ginger onto a cookie rack or sheet to dry. Sprinkle with additional sweetener, if desired. Once fully dry, move candied ginger to an air-tight container. This make take 2 hours or up to 24 hours. If your house is humid, the ginger may not dry completely. If you need to dry it further or wish make to give it a harder consistency, try using a dehydrator, or an oven at a low temperature until dried to your desired consistency. Keep an eye on it as the time required for it to dry can vary.
