This tomato and thyme white fish dish is versatile enough to be served for a keto or a carb-up day, with only minor adjustments. The sauce base made from a tomato reduction and fresh thyme is given an extra pop of umami with the addition of tamari soy sauce or coconut aminos. Then it's just a matter of choosing what to serve it with, steamed cauliflower/broccoli or zucchini noodles for keto or steamed rice or potatoes for a carb-up.

Carb-Up/Keto Tomato and Thyme Cod, Basa or Sole Fillets Recipe

Directions:

  1. Heat oil in a frying pan or skillet over medium heat. Add onion then sauté for 5-8 mins until lightly browned. Add garlic and sauté another 1-2 minutes, or until fragrant.

  2. Stir in tomatoes, leaves from a few sprigs of thyme and tamari soy sauce or coconut aminos, then bring to the boil.

  3. Turn heat down to medium-low and simmer 5 mins, then slip the fish fillets into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.
