Keto Vanilla Mug Cake Recipe

  1. ​Place the butter in a large mug and microwave for 20-30 seconds until melted. Add the egg and whisk it in with a fork.

  2. Stir in the milk, vanilla, and sweeteners. Add the almond flour, psyllium husk, glucomannan, sea salt, and baking powder. Beat the batter until smooth, then mix in any optional additions.

  3. Microwave for 1-2 minutes each until risen and springy when poked in the middle. Keep an eye on it as it cooks, making sure that it doesn't overflow over the top of the mug. Start with 45 seconds, check, then add time if not cooked enough. DO NOT overcook or it will be very dry. (*Note: Microwave power levels vary widely, so you may also need to adjust your power level as well as the time. It may take a little experimentation to get the extact time and power level right. You may also need to stop and start as part of your process.
