Mulled wine (or “gluwein” as it’s known from its German roots) just screams Christmas. And while it’s possible to make it keto-friendly using a lower carb red wine like Cabernet Sauvignon or Pinot Noir, white wines like Pinot Grigio and Sauvignon Blanc or a tad lower in carbs so I thought it was worth the effort of using this as a base over the traditional red. The seasonings are slightly different to reflect the lighter taste and colour, but I think you’ll be pleased with the combination.
Keto White Mulled Wine Recipe
Ingredients:
- 1 whole orange peel
- 1/2 lemon, sliced
- 5 whole cloves
- 3 whole star anise pods
- 2 green cardamom pods
- 1 piece (1 inch) peeled fresh ginger, thinly sliced
- 2 sprigs rosemary
- 1 cinnamon stick
- 1 cup water
- ⅓ cup erithrytol, powdered in a spice/coffee grinder
- 1/4 teaspoon orange-flavoured stevia drops
- ¼ cup white rum
- 1 750ml bottle Pinot Grigio or Sauvignon Blanc wine
Directions:
Peel orange in strips using a vegetable peeler, being careful not to remove any pith (the white part). Push cloves into peel. Set aside.
Combine, the star anise, cinnamon, ginger, water, cardamom pods, rosemary sprigs, orange peel, lemon slices, erithrytol and liquid stevia in a pot and bring to a boil for 3 minutes. (I use my Instant Pot on the ‘Saute’ setting.) Remove and discard the rosemary sprigs, turning the heat down to minimum (Or if using Instant Pot, use ‘Slow Cooker’ setting on high.)
Simmer the mixture, stirring occasionally,l for 10 minutes. Remove from heat (If using Instant pot, remove pot liner from unit), and add wine and rum. Let stand for 20 minutes to mull.
Just before serving, gently reheat mulled wine over medium heat (Or using ‘sauté’ setting if using Instant Pot) until just beginning to simmer. Do not boil! Alternatively, you can heat up individual cups of wine by microwaving on high for around 30-45 seconds. If you’re using the Instant Pot, and not serving it all at once, keep it covered but turned off to keep it warm. Whatever cooking method you’re using, don’t keep it heated as it will cause the alcohol to evaporate. Cooled wine should be gently reheated if necessary.
