Sometimes you get invited to a party last-minute or have people stopping by unexpectedly. This is why you need a few quick appy ideas for finger foods in your pocket so that you can plate something low-carb that you and everyone can enjoy with minimal time and effort. Here are 3 recipe ideas I like to use for this purpose.
Pickled Asparagus Wrapped in Deli-Sliced Meat with Herbed Cream Cheese
Ingredients:
- Pickled asparagus spears
- Deli-sliced meat (*I prefer lean ham, turkey or chicken.)
- herbed goat cheese or cream cheese (*If you prefer, you can by make your own simply by adding chopped fresh herbs.)
Directions:
Take a slice of meat. Lay a piece of asparagus on one side. Spread some of the cheese alone the length of the spear.
Roll the asparagus and cheese up in the slice of meat. Cut into 3 pieces.
Pickle, Sausage and Cheese Sticks
Ingredients:
- Baby dill pickles
- Sausage (pepperoni, kielbasa or other cooked sausage)
- Hard cheese (any kind you like)
Directions:
Chop the pickle, sausage and cheese into similar sized cubes.
Pierce all three onto a single toothpick.
Marinated Bocconcini Balls
Ingredients:
- Cocktail bocconcini balls
- Pesto (Try my pesto flex sauce recipe!) or an olive oil balsamic vinegar herb blend (You can buy this pre-made or make your own.)
Directions:
Put some bocconcini balls into a bowl. Cover with the olive oil balsamic blend. Cover and put in the fridge, allowing to marinate for 4 hours or longer.
Remove from fridge 20 minutes before serving. Serve with toothpicks.
