There are a few good lower carb options with which to replace potatoes to make French fries. Kohlrabi is my top choice, but this baked rutabaga fries recipe probably tastes a little closer to home, but is higher in carbs, which is why it is my second favourite option.
Keto Baked Rutabaga Fries Recipe
- 2 medium rutabagas (around 24 oz each), peeled and sliced into ¼” thick fries
- ¼ cup avocado oil
- 1 teaspoon kosher sea salt
- ¼ tsp freshly ground black pepper
Preheat the oven to 400F. In a large bowl, toss the rutabaga sticks with avocado oil, sea salt, and black pepper.
Place rutabaga fries on an oven safe rack onto a large baking sheet. Arrange the fries in a single layer on the rack. Bake for 35-45 minutes, until fries are soft on the inside and crispy on the outside. Serve hot with sugar-free ketchup or homemade avocado oil mayo.
