Bananas foster without a ton of fat or excessive amounts of brown sugar but still has the rich, sweet caramel taste we know and love? It IS possible.

The butter is cut way back and is really only used as a lubricant in the recipe. Instead of brown sugar, I used dates, which have their own natural caramel taste combined with all sorts of great nutritional properties including fibre, calcium, iron, phosphorus, sodium, potassium, magnesium, sulfur, zinc, as well as thiamin, riboflavin, niacin, vitamin B6, folate, vitamin A, and vitamin K. This paired with bananas with their own fibre and potassium and anti-inflammatory cinnamon, makes this a healthy dessert choice for your carb-up. Bear in mind that it is still fairly high in sugar, even though it’s from all natural sources so keep that in mind when choosing the rest of your carbs for your carb-up.

  1. Add chopped dates to a small saucepan with 1/3 cup of water.

  2. Bring to a simmer over medium heat. Turn the heat down to low and simmer for around 10 minutes, stirring frequently with a large wooden spoon. In the last 2 minute of cooking, use the spoon to gently mash the dates to break them down into a paste as they cook.

  3. Once the date-water mixture forms a sticky syrup, add the butter and extracts, cinnamon, and salt. Stir to combine.

  4. Turn the heat back up to medium. Add the sliced bananas and and cook on both sides until the bananas start to soften and brown, about 3 minutes.

  5. Carefully add the rum, if using, and shake the pan back and forth to warm the rum. Shake the pan back and forth, basting the bananas, until the flame dies. Serve with Low-Fat Greek Frozen Yogurt
