Keto BBQ Soy Chicken Drumsticks Recipe
- 8-10 chicken drumsticks, rinsed and patted dry)
- 1½ teaspoons kosher salt
- ¼ cup yellow onion, diced
- 1 bell pepper, chopped (*optional)
- ½ cup keto sugarless BBQ sauce
- ¼ cup gluten-free tamari soy sauce
- 1 tablespoon garlic, minced
- ⅛ teaspoon ground ginger
- 1 tablespoon unsweetened rice vinegar
- 2 teaspoons toasted sesame oil
Sprinkle salt all over the chicken legs, add to a baking sheet with a baking rack. Put in the fridge and allow to dry brine for at least 12-16 hours. (*You can bypass this step if you don't have time, but it does make the chicken juicier.)
Preheat oven to 425F. Arrange drumsticks into a baking dish with the onion and bell pepper (if using). Whisk together the remaining ingredients except the onion in a large bowl. Season with additional salt to taste (if desired). Pour the sauce over the drumsticks ensuring they all get a good coating.
Cover with foil and bake in the oven for 25-30 minutes, or until just an internal temperature of 165F is reached using a meat thermometer. Serve over cauliflower rice.
