Black bean chocolate pudding is a delicious, vegan treat that's easy to whip up on the quick. This recipe can be tailored to different dietary needs, whether you're looking for a low-carb keto treat, or a low-fat carb-up dessert. Either way, you get a good amount of protein paired with either healthy fats or carbs using wholesome, natural ingredients.
Keto/Carb-Up Vegan Black Bean Chocolate Pudding Recipe
Pudding Ingredients:
- 1 cup unsalted cooked or canned black beans or black soy beans, drained and rinsed
- 4-5 tablespoons unsweetened coconut milk beverage(*Or any non-dairy milk.)
- 2 tablespoons chocolate vegan protein powder
- 2 tablespoons raw cacao powder
- 2 medjool dates, pitted and chopped (*Or sub with 1 tablespoon keto maple syrup for low-carb.)
- 1 tablespoon keto maple syrup, or to taste (*May use real maple syrup or sub with more dates.)
- One large pinch fine sea salt
- One pinch Turkish coffee powder (*May sub espresso powder.)
- ⅛ teaspoon ground cinnamon (*optional)
- 1 teaspoon pure vanilla extract
- 1 teaspoon MCT oil or avocado oil (*May increase to 1 tablespoon for low-carb.)
Optional Garnish Ingredients:
- [Raw cacao nibs]
- Keto garnishes: Coconut custard, tofu custard, roast chopped nuts, toasted unsweetened shredded coconut
- Carb-up garnishes: 0% fat Greek yogurt, oat yogurt, sliced strawberries or bananas, roast chopped cashews or pistachios
Directions:
Add all ingredients to a blender. Blend until creamy and smooth, scraping down sides as needed. Taste and adjust sweetness as needed by adding more maple syrup or dates.
Scoop pudding into serving bowls and cover. Chill in the refrigerator until cold and thickened, around 2-3 hours. Serve as is or with a dollop of yogurt or custard and top with your chosen garnishes. Store in the fridge for up to 3-4 days or in the freezer for up to one month.
