Having scored a huge box of free frozen pearl onions, I went to work coming up with a recipe that would allow me to use a ton of them at once. This low-carb caramelized pearl onions recipe makes quick work of them and can be doubled, tripled, even quadrupled if you have a big enough pot.
Keto Caramelized Pearl Onions Recipe
Ingredients:
- 1 lb frozen peeled pearl onions, fully thawed and drained completely of all water
- 3 tablespoons butter (*Or use homemade vegan butter to make it vegan.)
- ½-1 tsp dried rosemary or dried thyme
- 1 tbsp balsamic vinegar
- Fine sea salt and freshly ground black pepper (to taste)
Directions:
In a large deep stainless steel skillet or pot, melt butter skillet over medium heat. Add the rosemary or thyme to butter and sauté until fragrant, around 1-3 minutes.
Add onions to skillet and toss to coat in butter and cook for 5 minutes.
Toss onions again and cook for 5 more minutes. Keep repeating this process until onions are browned on all sides.
Drizzle balsamic vinegar over the onions and toss to coat. Reduce heat to medium-low and cook for 5-7 minutes when onions are caramel in color.
