So who out there remembers Subway’s chicken pizziola sub? Having worked there as a teen, I remember it fondly, the combo of roast chicken, pepperoni, salami and cheese, topped with marinara sauce and your choice of veggies. I decided to use the last of my Parmesan folio wraps to recreate, nay, make a even better version of this fast food gem.

Keto Chicken Pizziola Wrap Recipe

Ingredients:

  • ¼ cup bell peppers, sliced into 1" strips
  • ¼ cup mushrooms, sliced
  • Kosher salt , to taste
  • 1 small clove garlic, finely chopped
  • 1 teaspoon avocado oil
  • 1 cup cooked chicken, diced
  • One Parmesan Folio wrap (*Note: You could wrap it in a keto flax wrap or flax wrap and add grated mozzarella cheese instead, but the Parmesan Folio is just a convenient option if you have them.)
  • 3-4 pepperoni or salami slices
  • 2-3 tablespoons keto marinara sauce
  • 1 tablespoon olives, sliced
  • 1 peperoncini peppers, sliced
  • 1 half artichoke heart, sliced
  • A few fresh basil leaves

Directions:

  1. Heat the avocado oil on a skillet to medium heat. Add the peppers and mushrooms and a sprinkle of kosher salt. While they are cooking, put the marinara sauce in the microwave and heat it until it's warmed to your liking. Sauté until mostly tender, around 3-4 minutes, then add the garlic and (cooked chicken to warm it up), and keep sautéing until all the veggies are tender and the chicken is warm.

  2. Lay the Parmesan folio wrap on a baking tray, parchment paper side down, and bake in an oven preheated to 375F for 6 minutes. When it comes out, you'll need to work fast to build your wrap while it is still pliable.

  3. First lay out the pepperoni/salami slices. Then add the chicken, peppers and mushrooms. Pour the marinara sauce overtop.

  4. Top with the artichokes, olives and peperoncini peppers, then sprinkle on the basil leaves before closing up the wrap. Devour immediately! You probably won't be able to put it down and pick it up too many times, but it's so tasty, you won't want to anyway.
