Chipwich ice cream sandwiches were an occasional treat that I used to buy at the local convenience store as a treat. Of course, they were laden with refined sugar and flour, so I decided to make my own sugar-free, gluten-free version of it to relive the guilty pleasure of my youth.

  1. Make the ice cream and cookies according to their recipes. Put the ice cream in the freezer overnight to solidify. Also freeze the cookies overnight individually.

  2. Put the chocolate chunks and toasted pecans (if using). Remove the ice cream and cookies from the freezer. Scoop ice cream onto the bottom of a cookie and spread to the edges until it's 1-2cm thick. Place the second cookie on the ice cream flat side down to form a sandwich.

  3. Roll the sandwich in the bowl of chocolate chips and pecans, so that the outside of the ice cream gets coated with the chocolate and nuts. Put in a container and back in the freezer to refreeze. Repeat with the remaining cookies.
