I’ve been looking for the perfect sandwich to make using my new chaffle recipe, then I remembered the croque monsieur/madame. It’s a wonderfully satiating comfort food, perfect for the munchies, or a greasy hangover meal, a brunchy sandwich that will play well with the crispy waffle texture and cheesiness of the chaffle.

Ingredients:

  • 2 keto chaffles
  • Thinly sliced gruyere cheese (enough for 3 layers)
  • 2 pieces of thinly sliced ham (or one thicker slice)
  • 1-2 teaspoons Dijon mustard (or to taste)
  • One batch of keto bechemel sauce

Directions:

  1. Make you use the crispy savoury chaffle directions for these chaffles.

  2. Preheat the broiler on high. Place one of the chaffles down on a baking pan with a grill rack. Add a layer of sliced gruyere then add a layer of sliced ham. Spread Dijon mustard on top of the ham. Add a second layer of sliced gruyere on top of the ham then place the second chaffle on top. Pour the bechemel sauce over top the sandwich then add one more layer of sliced gruyere.

  3. Put the sandwich under the broiler for a couple of minutes until cheese is melted, bubbly and golden. Watch carefully to make sure it doesn’t blacken.

  4. Remove from oven. If making it into a croque madame, simply top with a freshly cooked, sunny side up fried egg, cooked with a sprinkle of salt and pepper. Top with fresh parsley and serve hot.
