You always see goat cheese logs encrusted with herbs and spices in the cheese sections of grocery stores, but it's so much more satisfying to create your own at home, and usually cheaper too. This keto-friendly goat cheese spread with sun-dried tomato and rosemary recipe is one such option that I made for a charcuterie board, but there are so many different ways to do it, so just take the idea and run with it!

Keto Goat Cheese with Sun-Dried Tomato and Rosemary Spread Recipe

Ingredients:

  • 3 sun-dried tomato halves
  • 1 clove garlic, minced
  • 1½ tablespoons extra virgin olive oi
  • ½ tablespoon fresh rosemary leaves
  • One 6 oz. package of fresh goat cheese

Directions:

  1. Cover sun-dried tomato halves in boiling water and let stand five minutes. Drain, and chop.

  2. Combine chopped tomatoes, garlic, oil, and rosemary in a bowl. Cover and chill at least 4 hours.

  3. Just before serving, place goat cheese on a serving plate, and top with tomato mixture. Serve with keto crackers or keto bread.
