Cucumber Soup

This recipe doesn’t sound all that appetizing. In fact, it sound downright dull. When I first heard about this recipe from a cooking show, I wasn’t all that interested... but since I happened to have all the ingredients, and it was super easy to make, I decided to give it a try. I was surprised at how bold and complex the flavours. Super tasty! It’s the perfect soup for those lazy, hot summer days, but I’ll eat this all year round because it’s so easy!   1. Add all ingredients except cilantro and salt to a blender and blend until smooth.
  2. Add salt and cilantro leaves and pulse until incorporated but not pureed (there should be green flecks of cilantro throughout).
  3. Refrigerate for at least 3 hours. Taste again to ensure salt level is to your liking and add more if needed before serving.
