While I tend to steer away from using a lot of keto bread in my day-to-day meals, leaning more toward salads and veggie-based meals, every so often it's nice to make something different as a treat, whether it's for a special dinner, as an accompaniment for a dip, or simply because I have a craving for something bread based like eggs Benedict, grilled cheese or French toast. This is my go-to recipe for just such an occasion. There are a lot of keto bread recipes out there, but this one just seems to have a better consistency than most of the ones I've tried.

Keto Dinner Rolls Recipe

Ingredients:

Directions:

  1. Preheat oven to 425 degrees.
  2. In a microwaveable bowl add the mozzarella cheese and cream cheese. Microwave 2 minutes. Stir until combined.
  3. Whisk flour, baking powder and dried seasonings together. Add the eggs to the dried seasonings and stir until combined. Add this to the cheese mixture and continue to stir until incorporated.
  4. Spray a baking sheet with olive oil cooking spray.
  5. Wet hands and separate dough and form 8 rolls.
  6. Flatten slightly if preferred for your intended use. You may also add seasonings at this point (like flaked sea salt, sesame seeds, garlic powder, etc.)
  7. Place them onto the baking sheet and bake for 15 minutes, or until golden brown. Allow to cool then slice in half. Serve immediately or store in the fridge or freezer. If freezing, separate the halves and freeze on a tray lined with parchment paper or a silicon mat. Once frozen, join the halves together and store in a freezer bag.

*If making into mini dinner rolls to go with a dip (like my loaded pizza dip), form into around 24 one-inch balls and bake for 8-10 minutes, or until golden brown.

**If not using for in a savoury context (you probably don't want garlic, etc if using it for French toast), feel free to omit the spices from the dough.

This recipe is super versatile and can be used for a wide variety of purposes. It also really helps people transitioning into the keto diet if they're accustomed to having a lot of bread products on a day-to-day basis.
