Who doesn’t love a good casserole recipe for using up leftovers from a big dinner like Thanksgiving or Christmas turkey dinner? If done well, it can be just as good as the original dinner, sometimes even better! I quite enjoy this recipe and it’s blend of textures and creaminess. And adding cheese to anything rarely goes wrong! If you made all main and side dish recipes from my Keto Thanksgiving dinner meal plan, then you’ll have everything you need. But if you’re using plain veggies, I’ve included a work-around for the sauce. Enjoy!

Leftover Turkey Dinner Casserole Recipe

Ingredients:

Directions:

  1. Preheat the oven to 350F. Grease a 9x13” casserole dish. (*I use coconut oil spray.)

  2. Layer leftover stuffing on the bottom of the dish. Pour gravy over it.

  3. In a large bowl, stir together the turkey, veggie leftovers, ½ cup shredded mozzarella (and yogurt, mayo or sour cream if using plain veggies). Spread evenly on top of stuffing. Top with remaining 1 cup shredded mozzarella.

  4. If you don't want to eat it right away, you can cover it up and freeze it for another day. If eating it the same day, cover with foil then bake for 20-30 minutes, until the casserole is hot and the cheese is melted and bubbly. If baking from frozen, cover with foil then bake 55-65 minutes depending on how solidly frozen it is, removing the foil for the last 15 minutes of baking. If you thaw it before baking (takes around 24-36 hours to fully thaw), add 10-15 minutes to the original baking time, removing the foil for the last 10 minutes of baking.
