
Fresh berries are the crowning jewels for keto summer salads, and this blueberry spinach feta salad is no exception. Fresh radishes and cucumber are added for crunch and colour, along with briny feta and savoury toasted nuts, all of which are complementary to the flavour of the blueberries. Top it off with either my keto lemon poppy seed dressing or my balsamic vinaigrette and this salad gives you the best of the fresh produce and flavours that summer has to offer.
Keto Blueberry Spinach Fetal Salad Recipe
Ingredients:
- 4 cups baby spinach or mixed field greens
- ½ cup radishes, halved and thinly sliced
- ½ cup baby cucumbers, thinly sliced
- 2 tablespoons red onions, thinly sliced
- ½ cup fresh blueberries
- 2 tablespoons goat feta, crumbled (*Use vegan feta to make it vegan)
- 2 tablespoons roast hazelnuts or pistachios, chopped
3 tablespoons keto lemon poppy seed dressing or keto balsamic vinaigrette dressing (*or to taste) - Flaky sea salt (like Maldon or Fleur de sel and freshly ground freshly ground black pepper (to taste)
Directions:
In a large mixing bowl, toss together the spinach, radishes, cucumbers, blueberries, red onions, feta and dressing.
Add to serving bowls and sprinkle with roast hazelnuts or pistachios and serve!
