This campfire treat is back on my keto menu now that I have all the components I need to do it low-carb and sugar-free. There are a couple of differences in implementation with that come with the differences in the base ingredients, hence this “recipe.”

Keto S’mores Recipe

  1. Cut up some squares of aluminum foil and spray one side with cooking spray. Assemble your keto s’more and wrap it up with the foil, sprayed side on inside. You want to make sure there is enough foil that you can seal it well, but while still leaving enough space that you end up breaking the crackers as you seal it.

  2. Set grill on low to medium heat. Or have a fire with some red coals ready for cooking. Using tongs, place your s’mores on the grill or at the edges of your campfire’s coals, cracker side down. Cook for a 2-3 minutes, flip and repeat until desired doneness. Allow to cool enough so that you can safely unwrap the foil then gobble them up!

Cooking Tips:

Because grills vary so widely in temperature, you’ll want to monitor it’s cooking closely. The side of your marshmallow will affect cooking time too. You may need to open them up midway through until you have the process dialled in. You want the marshmallow to be warm and gooey, and the chocolate softened. You don’t want to overdo it or you’ll just end up with a piece of foil filled with a mess of wet graham crackers and melted marshmallow and chocolate (still delicious, but not ideal).

I had a blast making these keto s’mores and reliving my youth, while keeping it low-carb. I know it’s a bit of work to make it happen, since you have to, at the very least, make the graham crackers and marshmallows from scratch, but if you’re a lover of campfire s’mores, it is so worth the effort!
