I wouldn't call this a traditional "Mediterranean" pizza or anything since I'm pretty sure they wouldn't put canned tuna on a pizza. Nonetheless, the flavours are Mediterranean-inspired, marrying the tuna with feta, artichokes and olives. The herb-infused oil that gets drizzled on top brings it all together with an extra pop of flavour too in this lighter pizza recipe.
Keto Mediterranean Tuna Pizza with Herb-Infused Oil Recipe
Pizza Ingredients:
- One batch of lupin flour sourdough pizza crusts OR keto cheesy pizza crusts OR keto cauliflower pizza crusts
- ⅔ cup tomato sauce
- 2 cans of flaked tuna
- 2 tablespoons red onions, thinly sliced
- ½ cup red bell pepper, thinly sliced
- ½ cup marinated artichoke hearts, drained and chopped
- ⅔ cup feta, crumbled
- 1 tablespoon parmesan, finely grated
- 8 kalmata olives
Herb-Infused Oil Ingredients:
- Leaves from one branch of fresh rosemary
- ¼ teaspoon fresh garlic, crushed
- Small pinch crushed red pepper flakes
- Small pinch Lemon zest
- ⅓ cup extra virgin olive oil
Directions:
Press the rosemary leaves and garlic into the mortar to release the essential oils. Combine with olive oil, lemon zest and chili flakes in a bowl or glass jar to allow the flavours to blend for a few hours.
Prepare your choice of keto pizza crusts and allow to cool. If using the sourdough pizza crust recipe, you do not have to wait for it to cool.
Preheat oven to 450F (or maintain heat at 350F for sourdough pizza crusts). Spread tomato sauce over the crusts. Top with tuna, onions, bell pepper, artichokes, feta and Parmesan.
Cook in preheated oven for 12-15 minutes (or 17-20 minutes for sourdough pizza crust) or until cheese is melted and bubbly. Remove from oven, top with herb-infused oil and olives. Slice and serve.
