
This Norwegian meatball recipe is reminiscent of IKEA meatballs but is keto-friendly, and with a slightly different spicing to reflect the Norwegian approach. I decided to create this recipe, paired with my caramelized onion goat cheese sauce, is an homage to the awesome meatballs I had at Viking Soul Food in Portland’s food truck scene.
Keto Norwegian Meatball Recipe
Ingredients:
- 2 tablespoons oat fiber
- 1½ teaspoons coconut flour
- 1 teaspoon golden flaxmeal
- 1 teaspoon sweet paprika
- 1 teaspoon sea salt
- ¾ teaspoon - Freshly ground black pepper
- ½ teaspoon nutmeg, (freshly grated if possible)
- ½ teaspoon ground ginger
- ¼ teaspoon ground allspice
- ⅓ cup unsweetened almond milk (or water)
- 1 large egg, lightly beaten
- 1½ lbs lean ground beef
- 1 lb ground pork
- Ghee or butter for frying
Directions:
Put the dry ingredients into a medium mixing bowl. Add almond milk and blend well until no lumps remain. Allow to rest for 5 minutes.
Stir in meat and egg and and stir with a spoon until completely combined and sticky. Shape meat balls with your hands, dipping them in water now and again to keep meat from sticking.
Add ghee or butter to a frying pan on medium-low heat. Drop the meat balls on the frying pan, flattening them a little bit with a turner. Cover and fry until browned on the top and bottom, a few minutes on each side. Try not to crowd the pan. Be sure to leave some space around each meat ball. Remove from pan and keep hot and covered dish in an oven or slow cooker set to warm. Serve with keto Scandanavian red cabbage, topped with caramelized onion goat cheese sauce to complete the meal.
