By layering crispy almonds, chocolate coconut spread, raspberries, shredded coconut, chia seeds, cacao nibs and your choice of yogurt or creme fraiche, you get a mouth-pleasing mix of textures and flavours. Or experiment with other components to make it your own!
Keto Chocolate Raspberry Coconut Parfait Recipe
Ingredients:
- 2 tablespoons sliced almonds or slivered almonds
- 3 tablespoons vegan keto chocolate coconut spread, at room temperature
- 4 tablespoons homemade creme fraiche or high-fat yogurt(*Or keto coconut yogurt for vegan.)
- ⅛ teaspoon pure vanilla extract
- 3 tablespoons fresh or frozen raspberries
- 1½ tablespoons unsweetened shredded coconut
- ⅛ teaspoon chia seeds
- ½ teaspoon raw cacao nibs
Directions:
To a clear glass or ice cream bowl, add the almonds to form a base. Then later the yogurt, chocolate coconut spread, coconut chia seeds, raw cacao nibs, then raspberries. Repeat the layers if desired.
Top with a small dollop of yogurt then garnish pieces of the layer ingredients to give it a pretty finish then serve.
