
I had some ground lamb and was in the mood for flavours from the Middle East. I figured something in the vein of a casual street food, but faster and easier. Normally I would make something like kofta or meat balls, but shaping is work. Something more in the style of a taco meat where you just toss everything together in a pan and throw it in some sort of a wrap. So I came up with this low-carb Turkish-inspired ground lamb wrap recipe.
Keto Turkish-Inspired Ground Lamb Wraps or Salad Recipe
Lamb Filling Ingredients:
- ½ teaspoon baking soda
- 1 teaspoons kosher sea salt
- 1½ tablespoons water
- 1 lb ground lamb
- 1 tablespoon avocado oil
- ½ yellow onion chopped
- 4 cloves garlic, finely chopped
- 2 teaspoons ground sumac
- 2 teaspoon crushed red pepper flakes
- ¼ teaspoon ground ginger
- ½ teaspoon black pepper, freshly ground(or to taste)
- 2 teaspoons ground cumin
- Large pinch ground cinnamon
- 2 tablespoons tomato paste
- 2-3 tablespoon fresh mint or parsley, chopped
Wrap Assembly Ingredients:
- 4 keto flax wraps, butter lettuce leaves or cabbage cups (*Or just use a base of any mixed greens as a salad.)
- 1 cup labneh or middle eastern yogurt sauce (or plain homemade high-fat yogurt).
- Diced tomatoes
- Chopped pickled turnips OR sliced kalmata olives (*You can do both, but it just going with one is better as it gets a little briny tasting with both.)
- Diced cucumber
- Red onion, very thinly sliced
- Crumbled Tulum cheese (*Or sub with feta, which is similar.)
- Arugula or chopped baby spinach leaves
Directions:
Whisk together baking soda, kosher sea salt and water in a large mixing bowl. Add the beef and work the mixture into it. Allow to rest for 20 minutes while you get started on the other ingredients.
Heat avocado oil in a large skillet over medium heat. Add onions and sauté until translucent, around 2-3 minutes. Add garlic and sauté until fragrant, around 1-2 minutes. Add tomato paste and all the spices (but not the fresh herbs). Sauté until fragrant.
Add the ground lamb. Using the back of a spoon, break up the meat and begin to brown. Cook until cooked through (no longer pink). Turn off the heat and stir in the fresh herbs.
Assemble the wraps or Salad. For wraps, start spooning the lamb into your chosen wrap or cup. Top with any of your desired toppings then spoon the your chosen yogurt sauce on top with a sprinkle of arugula or spinach. For salad, just throw your chosen greens into a bowl and put everything on top.
