
This recipe takes the comforting flavours of a peanut butter and jelly sandwich and turns them into a delightful party dip that everyone can enjoy, young or young at heart. Creamy, sweet, with a bit of crunch, serve it with keto graham crackers or celery and relive your youth!
Keto Peanut Butter and Jelly Dip Recipe
Ingredients:
- 8 oz cream cheese, softened (*Sub with keto coconut cream cheese for vegan.
- ½ cup natural peanut butter (*You can substitute partially or fully with other nut butters to reduce carbs. I find that swapping 1 tablespoon with almond butter or other nut/seed butter works well, without losing the peanut taste.)
- ½ cup keto strawberry jam/jelly or keto blackberry bay leaf jam
- 2 tablespoons Confectioner’s Swerve or other erithrytol-based sweetener powdered, (to taste)
- 10 drops liquid stevia (vanilla-flavoured if you have it)
- ⅛ teaspoon sea salt
- ½ cup roasted salted peanuts, chopped but leaving one tablespoon unchopped for the top
Directions:
In a medium mixing bowl, beat the cream cheese with an electric mixing bowl until light and fluffy. Beat in the peanut butter, salt and sweetener. Stir in the chopped peanuts. Swirl in the strawberry jam, saving 1 tablespoon for the top, just enough to work it throughout the mixture while still distinctly separate from the peanut butter base.
Transfer the mixture to a serving bowl and top with additional jam and peanuts. Refrigerate until ready to serve. Serve with keto graham crackers or keto bread.
